be able to set display preferences to show the date of an activity, not the day of the week for activities that are within the next 7 days
On the dashboard, when I click on the 'activities' tab, and set it for open activities - past due and xx time into the future, i don't want to see "Thursday" "Friday", etc on activities that are in the next 7 days. I want to see the exact date, even if it's tomorrow. Can this be a preference that I can set for my dashboard display?

Agreed. Seeing "Monday" on the previous Monday seems disjointed. It would also be nice to see both the start date and due date on the Activity screen.
