The title of a workflow defaults to the template name, which usually is not very informative for the end users.

We always change the workflow title to the following format: "Client last name, Client first name - Account Number - description of task".

I'd like to be able to have a mail merge field be a part of the template, for naming the title of the workflows.

For example, we run 300 quarterly reviews via bulk workflow launch. They're all named the exact same thing so it's hard to tell who the workflow is for, without having their name in the title of the workflow.
